Default Cannot change Topology

Can anyone explain why I cannot edit the Topology tab in the "Interface Properties"?

All three interfaces are set to "External (leads out to the internet)" and I cannot change any of the interfaces!

I want to set one to Internal and the other to DMZ...

Check your CP object, it may be defined as a host rather than a gateway. If it is a host, you can convert it to a gateway by right clicking on it and selecting convert to gateway.
