i was under the impression you could use QoS classes in Check Point to mark the packets as they leave the gateway using diffserv codes?

As you can specify QoS for both inbound and outbound traffic I would imagine so long as you've setup the correct DiffServ classes in the QoS tab you should be able to prioritise accordingly.
